Cold Beet Soup

It is that time of year again to start making beet soup.  I try every year and can’t seem to make it as my relatives do in Latvia.  Does anyone have a recipe to share?

borshch is not exclusivelly latvian, but i like it….............warm.

Here’s the recipe I use, which reminds me as you say, it’s that time of the year again and I really do enjoy cold beet soup.  When I was in Latvia, it was readily available most everywhere.  I can’t remember if this recipe is as good or not, but something to consider is that they don’t have quite the same products as we do here in the states.  The buttermilk, cream, butter, etc. tastes different and is no doubt superior than what we get here in the supermarkets.  Hope this is satisfactory.

Those are really nice recipes - however, I like this kind of soup warm better, too.

Wow, i was about to start a thread. I just returned home from latvia and cant wait to make this soup. I had it most days.
